I used a block of sharp cheddar, most of a block of gouda and about half a block of Munster. Let them sit out about an hour to soften a bit then cube them. Shredding all that will milk you.

I just luxuriate in your brilliant SMERSH, Annie Anxiety, Storm Bugs '80s trifecta! <<*swoon*>> There was a show on WMUA back in the early-to-mid '80s that had a time-slot like 3-6 a.m. that I used to set my alarm clock on Thursday night so I could listen to it and study for my AP English vocab test on Friday morning. These kind of outsider, lo-fi, analog, minimalist industrial weirdness is what I would wake up to hear on said show!!!
