Yep I plan on doing some big batch Sundays in prep for winter. Lasagne, stews/soups, enchi-lasagne, burritos, pulled pork and more. But this will take weeks... one per Sunday hopefully. Then the fridge will have a happy freezer full of portions.

Ahab: Make homemade corn tortillas (or buy them it's ok too). Layer the lasagna pan like a red sauce & pasta box recipe but with enchilada sauce and tortillas. Plus your inner cooked protein/green/veg and grated cheese additional layers. Yum. Black olive and cheese and sauce top layer. Foil cover for the long haul. Uncovered for the end to brown the top.

The enchi-sagna does get even better after fridge and freezer "aging". Don't get me wrong, still great in its oozing, drifting mass of just-outta-the-oven first bite. But over time all the goodness permeates the tortilla layers. And those little rectangle cuts in the freezer just so come in handy later.

Brian K, I work next door to Aldi. I literally go there every day and find a protein source and veg. I always have rice or potato or pasta. I always have onions and garlic. I keep a full cabinet of penzeys spices, plus fresh if i went to the farmersmarket. Then I get out my cast iron, some olive oil, maybe wine, and wing it. Idk from prep!

At my first Neil & the Horse show in 1986 I liked hearing the 2 big guns from Trans (Computer Age and Sample and Hold). Older heads may have complained at the time. It made sense to me tho. They were from an lp he put out 4 yrs earlier. And the crunch of 2 big old Gibsons through big old stacks made those come alive in the live format. I remember hearing those 2 songs and Transfomer Man first in a concert that was broadcast on cable tv from the Trans era. Gig was in Holland I think.
