i think as long as it is decently moist while remaining crunchy on the outside it's fine by me...

i find green falafel unusual but still appreciate it

My recent go to (other than homemade) is Heba's falafel, which is a frozen block of wet falafel mix that you add baking soda to. Green, yum.

@TAndy, I agree w Ameena that Mamoun's is really solid. However, I was really impressed by Goldie's in Philly, where I live. Annoying yuppie vibe, but phenomenal crisp in the exosphere and unbelievable softness in the interior
